What is white pepper?
What is white pepper? A very old pepper, harvested when the ratio of ripe seeds to the cluster is highest.
White pepper is also known as skull pepper, harvested when the pepper cluster has the highest ripeness rate, very old pepper has formed a skull. Usually, after picking, the pepper clusters are kept in the cool for 3-5 days to increase the ripening rate, then remove the shell and take the skull inside. Currently, the natural source of black pepper does not meet the demand, so white pepper is also often processed from black pepper (lesser, peeled).
Skull pepper is ivory white or gray with residual stripes, the appearance is not wrinkled like black pepper. It's not as strong as black pepper because it doesn't have an oil-filled rind, but it's spicier than black pepper.
White pepper is often used for luxury menus so as not to lose the aesthetic, affect the color of the dish, such as Western dishes with milk or cream ingredients as the background.
