Black pepper is an old pepper with a green color, after drying, the shell will turn black. To have black pepper, people usually harvest when the fruit bunch has some red or yellow fruits, the percentage of old green seeds is still the highest.
Black pepper is mildly spicy, but the aroma is the strongest, used to increase the warm spicy taste and deodorize fishy dishes.
