Purple rice, is a traditional Asian rice. In some places, purple rice is also known as forbidden rice, sewer rice or black rice. Rice grains when raw are black, or purple-black. Cooked, the rice will give purple color.
 
The deep purple color of rice grains is mainly due to the anthocyanin content.

Black purple rice is an ancient mutant from rice varieties of Oryza sativa L., Two popular varieties in Vietnam today are Oryza sativa cv. Heugjinjubyeo and O. sativa L. Heugkwangbyeo. Like other rice varieties, this rice is derived from Japanese rice. It is estimated that purple-black rice has been cultivated since 2500 BC.
 
In ancient times, this type of rice was also called emperor rice because only the emperor could use this rice. The reason is that the purple rice is the color of wealth and this grain is difficult to cultivate.
 
This rice has 2 forms: sticky rice and plain rice. Both forms are gluten-free. Gluten is the main protein found in wheat and many different grains. Some people may not be able to use gluten-containing products, such as those with celiac disease, non-celiac gluten sensitivity, gluten ataxia, etc.
